Babette’s Burger Buns

Ingredients

570g AP or Bread Flour

250g warm water

2 eggs

8g Yeast

3 Tbsp sugar

2 tsp salt

4 Tbsp olive oil

1 egg yolk

sesame seeds

Method

1) Mix all dry ingredients together

2) Add whisked eggs, oil and water

3) Mix all ingredients together and knead briefly

4) Stretch and fold every 20 mins for 1 hour

5) Allow to rise for another 1-2 hours ( with a stretch and fold every hour)

6) Portion into 100g or 120g pieces, then shape into rolls and flatten with the palm off your hand

7) Allow to rise for 1 hour

8) Mix egg yolk with 2-3 Tbsp warm water and brush top of buns

9) Sprinkle sesame seeds on top and bake in pre-heated oven (190-200 degrees C) for 15 to 20 mins or until golden

10) Enjoy with your favourite burger fillings and toppings
