Organic Flaxseed Vegetable Wraps with Peanut Lime Sauce

Yield: 10 Small wraps

Total Time: 35 Minutes

Ingredients:

Flaxseeds wraps

·        1/3 Cup boiling water

·        1 Cup One Organic Farm Organic Whole flaxseeds

·        1/4 tsp salt

·        1/4 tsp Organic Ground Ginger

·        1/4 tsp Organic Ground Coriander

Peanut lime sauce

·        1/3 cup Organic Smooth Peanut Butter

·        1 garlic clove, finely grated

·        1 tsp grated fresh ginger

·        2 tablespoons fresh lime juice

·        2 tablespoons Coconut Aminos

·        1 teaspoon sugar

·        1/4 tsp sriracha (more depending on your spice preference)

·        1/4 cup warm water

Filling:

·        1 pkg organic mini cucumbers, cut into ¼ inch sticks

·        1 organic red bell pepper, thinly sliced

·        1 organic carrot, cut into matchsticks

·        ¼ head organic purple cabbage, thinly sliced

·        ½ cup fresh mint leaves

·        2 tbsp peanuts, toasted and chopped, for garnish

Instructions:

1.      In a small bowl mix together peanut butter, garlic, ginger, lime juice, soy sauce, sugar, sriracha and warm water. Set aside.

2.      Blend flaxseeds in a blender until it is a almost fine powder. Transfer to a medium sized bowl, stir in salt, ginger and coriander. Pour in boiling water, stir with with a wooden spoon or spatula until it comes together, adding a tablespoon of water if the dough feels too dry. The dough should be wet enough that everything comes together in a ball.

3.      Roll out 1 ½ tbsp sized balls of dough in between two pieces of parchment paper until they are very thin about 2 – 3 mm thick. Repeat with remaining dough, you should have about 10 wraps.

4.      Heat a large non stick pan over medium heat. Once the pan is hot, spray the pan lightly with cooking oil, or brush lightly with oil. Add wraps one at a time, cooking for 1 minute on the first side down and 30 seconds once flipped. Transfer to a plate, cover with a damp towel while you cook remaining wraps.

5.      Assemble wraps by placing a bit of the veggies in each wrap, drizzle with peanut sauce, chopped peanuts, garnish with fresh mint leaves. Serve with extra peanut sauce on the side for dipping.
