Lentil Bolognese

Ingredients:

  • 1 Tbsp Organic Olive Oil

  • 3 Large Organic Carrots

  • 2 Ribs Organic Celery, finely chopped

  • 1 Small Organic Onion, finely chopped

  • 1 Small Organic Red Pepper, finely chopped

  • 4 Cloves Organic Garlic, minced

  • Pinch of salt

  • 750ml of Organic Marinara Sauce

  • 1 Tbsp Organic Fresh Basil & Oregano

  • 1/2 tsp Organic Chilli Powder

  • 1 Tbsp Organic Coconut Sugar

  • 1/2 Cup Water

  • 1/2 Cup Organic Lentils

  • Salt & Pepper to taste

  • Fresh parmesan, parsley and lemon to serve

Directions:

  1. Heat the olive oil and saute the carrots, onion, pepper & celery until soft. Add the garlic & salt, saute for 1 minute

  2. Add the marinara sauce, herbs & spices along with the water & lentils.

  3. Simmer the sauce on low for 20 - 30 minutes until the lentils are cooked. Adjust spices to taste.

  4. Serve hot over fresh organic pasta, spaghetti squash, zoodles or use as “Sloppy Joe”.

Mom Tip! If you’d like to disguise all the veggie goodness in this dish, blitz in your blender! They won’t know the difference :)
