Simple Buttermilk Pancakes

Soft, tender, and easy to make, these pancakes are the kind you come back to again and again. A simple recipe made for slow mornings, full plates, and everyday kitchens.

Ingredients

• 2 cups One Organic Farm flour

• 2 tsp baking powder

• 1/4 tsp baking soda

• 1/2 tsp salt

• 2 eggs

• 2 1/4 cups buttermilk

• 3 tbsp melted butter

• 1 tsp vanilla

Method

1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

2. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla.

3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

4. Let the batter rest for 3 to 5 minutes.

5. Heat a lightly greased pan or griddle over medium heat.

6. Scoop the batter onto the pan and cook until bubbles form on the surface and the edges begin to set.

7. Flip and cook until golden.

8. Serve warm with butter, maple syrup, or fresh berries.

A few notes

• For a thinner batter, add a little more buttermilk.

• For best texture, mix gently and avoid overworking the batter.
